Living It

I’ve been on a roll with the holiday meals this year. Did my first turkey over Thanksgiving, and now, unlike the last couple of years,  my Christmas meat came out just right.

It helped that I used this forgiving recipe for beef pot roast with pistachio salt. The meat was tender and delicious, and the root vegetables were very appropriate. Served with some rustic bread and a green salad.

Sort of wish I could stay for a white Christmas.

It was so close, I actually thought it was fake at first.

It does this to taunt me.
